Job Brief

We are seeking a skilled and dependable Sous Chef to support the Head Chef in overseeing daily kitchen operations and maintaining exceptional culinary standards for our clients. The Sous Chef plays a critical leadership role, ensuring consistency in food quality, efficient kitchen workflow, and adherence to hygiene and safety standards. This position requires strong technical cooking skills, operational discipline, and the ability to lead and motivate kitchen staff.

What You Will Be Doing

• Assist the Head Chef in managing daily kitchen operations across all sections.
• Supervise food preparation and cooking to ensure quality, consistency, and timely service.
• Enforce kitchen hygiene, sanitation, and food safety standards in line with HACCP guidelines.
• Coordinate and oversee kitchen staff schedules, duties, and performance during shifts.
• Conduct quality checks on dishes before service to ensure presentation and taste meet standards.
• Support menu execution, recipe standardisation, and portion control.
• Assist with inventory management, stock rotation, and requisition of kitchen supplies.
• Reduce food waste and control kitchen costs through effective planning and monitoring.
• Step in as acting Head Chef in the absence of the Executive/Head Chef.
• Support training, mentoring, and development of junior kitchen staff.

The Ideal Candidate

• Proven experience as a Sous Chef or Senior Chef de Partie in a reputable kitchen.
• Strong culinary skills with the ability to manage multiple kitchen sections.
• Solid knowledge of food safety, hygiene standards, and kitchen SOPs.
• Leadership ability with a hands-on, team-oriented approach.
• Excellent time management and organisational skills.
• Ability to work effectively under pressure in a fast-paced environment.
• Culinary qualification or formal training is an advantage.
