Job brief
We are looking for a results-driven and detail-oriented Production Officer to manage and oversee daily food preparation and production activities. The ideal candidate will ensure efficient kitchen operations, high-quality output, proper inventory control, and compliance with food safety standards. You will supervise kitchen staff, enforce SOPs, and work closely with other departments to ensure smooth and timely service delivery.
What you will be doing
- Oversee food preparation and ensure consistency and quality across all meals.
- Manage daily production schedules in alignment with customer demands and available inventory.
- Develop and manage rosters to ensure optimal staffing levels and shift coverage.
- Monitor and control stock levels to reduce waste and prevent shortages.
- Ensure all kitchen operations comply with food health and safety regulations.
- Supervise, train, and support kitchen staff including cooks, bakers, and processors.
- Participate in hiring and onboarding of production staff.
- Maintain and inspect kitchen equipment, ensuring all are in good working condition.
- Conduct regular SOP reviews and enforce compliance across the production team.
- Collaborate with front-of-house staff to ensure coordinated service and quality presentation.
- Train FOH staff on proper food handling for displayed meals and maintain appropriate bain-marie temperatures.
- Track and manage kitchen performance metrics such as waste, cost, and scheduling efficiency.
- Address production issues promptly and implement corrective actions.
The ideal candidate
- Bachelor’s Degree in Culinary Arts, Hospitality Management, Food Science, or a related field.
- 1–3 years of experience in food production, kitchen supervision, or restaurant operations.
- Knowledge of inventory control, food quality assurance, and kitchen staff management.
- HACCP certification or other food safety qualifications is an added advantage.
- Strong leadership, organisational, and communication skills.
- Ability to work efficiently in a fast-paced environment with attention to detail.
- Familiarity with kitchen equipment, maintenance, and best food safety practices.
