Job Brief
We are looking for a Cost Controller who has experience in the hospitality industry, and who will be responsible for managing the financial aspects of the food and beverage (F&B) operations. This role requires a highly analytical and detail-oriented individual to oversee inventory management, cost analysis, and pricing strategies. The Cost Controller works closely with the executive chef and restaurant manager to ensure accurate menu pricing and budget alignment.
What You Will Be Doing
- Monitor and control food and beverage costs through regular cost and variance analysis.
- Develop and implement cost control policies to optimize resource use.
- Conduct monthly inventory counts and reconcile discrepancies.
- Assist in preparing departmental budgets and forecasts.
- Analyze financial data to identify trends and cost-saving opportunities.
- Provide accurate and timely financial reports to management.
- Maintain accurate inventory records for all food and beverage items.
- Ensure proper storage and handling of inventory to minimize waste and spoilage.
- Coordinate with purchasing and receiving departments for cost-effective procurement.
- Collaborate with the culinary team to analyze menu profitability and suggest pricing adjustments.
- Monitor and update recipe costs regularly to ensure profitability.
- Ensure compliance with internal controls and external regulations.
- Prepare and present cost reports and analyses to management.
- Conduct audits to maintain cost control standards.
- Negotiate with suppliers to secure optimal pricing and terms.
- Evaluate vendor performance to maintain cost-effectiveness and quality.
- Train staff on cost control procedures and best practices.
- Implement training programs to improve cost awareness.
- Work with kitchen and service staff to enhance operational efficiency and reduce waste.
- Implement portion control and standard recipe procedures.
- Analyze sales data to identify improvement opportunities.
- Utilize cost control software to track and manage costs.
- Ensure data accuracy within cost control systems.
- Stay updated on industry trends and advancements.
- Collaborate with the F&B team to uphold high service standards.
- Address cost-related issues impacting the guest experience.
- Verify accurate sales transfers to the Property Management System (PMS).
- Identify weaknesses in cost control measures and suggest improvements.
- Validate daily food and beverage revenue reports.
- Link articles and recipes in Material Control systems.
- Prepare and distribute daily, monthly, and departmental cost reports.
- Perform spot-checks on receiving departments for quality control.
- Maintain menu pricing, consumption, and POS systems.
- Ensure information security within the department.
- Execute any other tasks assigned by management.
The Ideal Candidate
- Education & Experience: Bachelor’s degree in Accounting, Finance, or a related field. Prior experience in cost control within the hospitality industry is preferred.
- Technical Skills: Proficiency in financial analysis, inventory management, and cost control software.
- Analytical Abilities: Strong analytical and problem-solving skills to assess cost efficiency.
- Communication Skills: Excellent verbal and written communication skills to interact with management and vendors.
- Attention to Detail: Highly detail-oriented with the ability to identify discrepancies and inconsistencies.
- Interpersonal Skills: Ability to collaborate effectively with chefs, managers, and finance teams.
