Job Brief

We are looking for an Assistant Steward Manager who will support the Steward Manager in overseeing the kitchen and dining areas’ cleanliness, organization, and sanitation. This role is responsible for managing stewarding operations, including dishwashing, cleaning, and ensuring health and safety standards are maintained. Additionally, the Assistant Steward Manager will supervise culinary and stewarding safe work practices, ensure guest satisfaction, and monitor compliance with state health regulations and hotel requirements.

What You Will Be Doing

  • Support the Steward Manager in overseeing day-to-day stewarding operations, including maintaining cleanliness in the kitchen, dishwashing, and equipment storage areas.
  • Supervise and train stewards to follow proper sanitation, safety, and cleanliness procedures.
  • Ensure culinary and stewarding teams follow safe work practices to minimize accidents, and that team members properly use all necessary safety equipment (gloves, goggles, chemicals).
  • Ensure compliance with state health regulations and hotel standards in all work areas, and monitor compliance with sanitation and hygiene procedures.
  • Identify situations that compromise department standards and implement timely resolutions to maintain high service and cleanliness.
  • Perform all duties with the goal of providing excellent guest service in an efficient manner, ensuring cleanliness standards are met to enhance guest experience.
  • Train kitchen and stewarding team members on the proper use of chemicals, safety procedures, and equipment handling.
  • Monitor and manage inventory of cleaning supplies and chemicals, ensuring sufficient stock levels and minimizing wastage.
  • Oversee the proper maintenance and functioning of dishwashing machines, kitchen equipment, and tools. Coordinate with maintenance teams for timely repairs when needed.
  • Supervise the proper disposal of garbage and recycling according to environmental and local regulations.
  • Work closely with culinary and food and beverage teams to ensure the seamless operation of service. Address any issues related to cleaning or equipment needs promptly.
  • Assist in creating work schedules for the stewarding team, ensuring adequate staffing during peak hours.
  • Prepare reports on inventory, equipment, and operational issues for review by the Steward Manager.
  • Participate in regular audits to ensure compliance with all health, safety, and hygiene regulations.

The Ideal Candidate

  • Minimum four (4) years of experience in stewarding or kitchen operations, preferably in a supervisory or managerial role
  • Strong leadership and team management skills
  • Knowledge of kitchen hygiene, sanitation, and safety regulations
  • Ability to supervise safe work practices to minimize accidents and ensure safety protocols are followed
  • Experience with inventory management and maintaining sanitation equipment
  • Strong problem-solving abilities to identify and resolve issues that compromise department standards
  • Proficient in the use and maintenance of dishwashing equipment
  • Ability to work in a fast-paced, high-pressure environment
  • Strong organizational and multitasking skills
  • Basic knowledge of inventory management
  • Good communication and interpersonal skills
  • Must be willing to work flexible hours, including weekends and holidays
